These cookies boast a beautiful cracked appearance on their surface, thanks to the coating of powdered sugar, and a soft, chewy texture inside. Ingredients:
- 1 ½ cup all-purpose flour
- 1/2 cup purple yam flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract – optional
- Few drops of purple food colouring – optional
- 1 cup of icing sugar
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls using your hands. Roll each ball in powdered sugar until fully coated.
- Place them on the prepared baking sheet, leaving a few inches of space between each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
