Jackfruit Flour Flatbread (aka. Roti)
This soft and nutritious flatbread or roti combines the health benefits of jackfruit flour with the pliability of all-purpose flour.
Jackfruit flour is rich in fiber and lower in carbs, making these rotis a great option for a balanced, diabetic-friendly meal. Perfect with curries, lentils, or even as a wrap or taco base.
Ingredients:
- 1/2 cup Finch Foods jackfruit flour
- 1/2 cup all-purpose flour (maida)
- 1/4 tsp Finch Foods salt
- 1 tbsp oil or ghee (optional, for softness)
- Water (as needed, to knead)
- Ghee or oil (for cooking, optional)
Instructions:
- Mix the Flours: In a large bowl, combine jackfruit flour, all-purpose flour, and salt. Mix well.
- Knead the Dough: Gradually add warm water and knead into a soft, pliable dough. Add oil or ghee while kneading for softer rotis. Let it rest for 15–20 minutes covered with a damp cloth.
- Divide & Roll: Divide the dough into small balls. Roll each ball into a thin, round roti using a rolling pin on a floured surface.
- Cook the Roti: Heat a skillet on medium-high heat. Cook the flatbread on one side until bubbles appear, flip and cook the other side. Press lightly with a spatula to puff it up. Cook until golden spots appear. Optionally brush with ghee.
- Serve Hot: Serve warm with any curry, chutney or sambal.
